Edible stones are a classic molecular gastronomy dish. They are in a category some call "culinary deception". They make for a delightful presentation because they can remain at the table setting until instructed to eat them.

Lactose is the sugar of milk. It is sometimes used as a sweetener and is a key ingredient for edible stones. For example, potatoes coated in a thin layer of edible clay, such as kaolin, and lactose gives the appearance of dry river stones.

Kaolin (Kaulinus) is an edible clay which when mixed with lactose serves as an adhesive agent to produce edible stones and crunchy textures.
