Potato Puree

Ingredients:

  • 12 - Russet Potatoes
  • 5 stalks - Rosemary
  • 1 lb - Unsalted butter
  • 1 1⁄2 cup - Heavy cream
  • Salt

Instructions:

  1. Peel potatoes and put them into a large pot with rosemary
  2. Fill the pot with cold water
  3. Bring the water to a boil and check potatoes with a fork till they are soft
  4. In a saucepan slowly melt the butter into heavy cream
  5. Using a food miller while potatoes are hot mill onto a pot and keep adding butter-cream
  6. Once all the potatoes are milled add salt and fold the mash potatoes only three times
